The first sangiovese from Tenuta Licinia from a small 1Ha calcareous plot 420m altitude west facing. It’s made in a quite un-sangiovese way - low cropping late picking and light extraction and light ageing. The yields were 17HL/Ha and we punched down once only. The ageing was 10 months in large format oak (compare that to 36 months which is typical for Montalcino) and 7 months in concrete. Like our other cru’s we only pick small spread out bunches and even in a small parcel not all the soils are exactly the same, so we leave out some parts (where the topsoil is a little deeper and the plants more vigourous). Then there is slow hand sorting of individual berries, whole berry encuvage and 23 centigrade (relatively low) average fermentation temperatures.
